Zuppa Toscana

Ingredients
  

  • 1 tsp neutral oil
  • 1 lb ground hot Italian sausage
  • 1 pkg Frontier Co-op® Chicken Noodle Soup Mix*u003ca href=u0022https://www.coopmarket.com/products/frontier-co-op-chicken-noodle-soup-mix-4-23-ozu0022 target=u0022_blanku0022u003eu003c/au003e
  • 6 cups water
  • 4 cups kale, de-ribbed and torn into smaller pieces
  • 1/2 cup heavy cream to taste, optional

Method
 

  1. In a 4-quart (or larger) stock pot, heat oil over medium-heat.
  2. Add sausage and brown for 5 to 7 minutes.
  3. Add Chicken Noodle Soup Mix and water, stirring to combine.
  4. Bring soup mixture to a boil, then reduce heat to low and cook for 12 minutes.
  5. Add kale and cook for 3 to 5 minutes.
  6. Remove soup from heat, stir in heavy cream if desired, and serve.
