By adding three ingredients to our Chicken Soup Mix, you create a classic Italian comfort soup. This Zuppa Toscana recipe makes a hearty soup with lots of flavor, a little spice from the sausage and earthiness from the kale. Just serve with warm crusty bread.

Ingredients
  

  • 1 tsp neutral oil
  • 1 lb ground hot Italian sausage
  • 1 pkg Frontier Co-op® Chicken Noodle Soup Mix*
  • 6 cups water
  • 4 cups kale, de-ribbed and torn into smaller pieces
  • 1/2 cup heavy cream to taste, optional

Instructions
 

  • In a 4-quart (or larger) stock pot, heat oil over medium-heat.
  • Add sausage and brown for 5 to 7 minutes.
  • Add Chicken Noodle Soup Mix and water, stirring to combine.
  • Bring soup mixture to a boil, then reduce heat to low and cook for 12 minutes.
  • Add kale and cook for 3 to 5 minutes.
  • Remove soup from heat, stir in heavy cream if desired, and serve.

Notes

NOTES
  1. *This mix does not contain noodles.
  2. For a white bean and kale soup, replace sausage with one can of cannellini beans.
