Vanilla Mint Brownie

Luscious, chocolaty brownies infused with organic peppermint flavor, studded with chocolate and white chocolate chips, and finished with a creamy vanilla-mint drizzle. We dare you to say no!

Ingredients
  

  • 1/2 cup (1 stick) butter, melted and cooled slightly
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 Large Eggs
  • 1 1/2 tsp Simply Organic® Pure Madagascar Vanilla Extract
  • 1/2 tsp Simply Organic® Peppermint Flavor
  • 1/2 cup flour
  • 1/8 tsp sea salt
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup white chocolate chips
  • Oil or butter, for oiling pan
Vanilla Mint Drizzle
  • 1 tbsp butter, melted
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp Simply Organic® Pure Madagascar Vanilla Extract
  • 1/4 tsp Simply Organic® Peppermint Flavor

Method
 

To Make the Brownies
  1. Preheat oven to 350 degrees.
  2. Lightly oil an 8-x-8-inch pan with butter or favorite oil.
  3. With a sturdy spoon or hand mixer, combine melted butter, white sugar, brown sugar and cocoa powder.
  4. Add eggs, vanilla extract and peppermint flavor, and mix to combine.
  5. Add flour and salt, mix just until combined.
  6. Fold in chocolate and white chocolate chips.
  7. Transfer batter to prepared pan and bake 25 to 30 minutes, or until brownies test done in center.
To Make the Vanilla Mint Drizzle:
  1. In medium bowl, whisk powdered sugar into melted butter, ¼ cup at a time, until absorbed.
  2. Add vanilla and peppermint flavor, whisk to combine.
  3. Drizzle over brownies, and serve.
