Gluten Free Apple Bread Pudding

Ingredients
  

  • Gluten free nonstick cooking spray
  • 1 loaf gluten free bread cut into 1-inch cubes about 8 cups when cubed
  • 2 large Apples Peeled, Cored and Diced
  • 2 cups Milk
  • 2 cups Heavy Cream
  • 8 Large Cage-Free Eggs
  • 1/2 cup Wholesome! Organic Brown Sugar light or dark
  • 1 tsp Simply Organic Pure Vanilla Extract
  • 1 tsp Simply Organic Ground Cinnamon
  • 1/2 tsp Simply Organic Ground Cinnamon
  • 1/4 tsp Simply Organic Ground Nutmeg
  • 3 tbsp Melted Butter
  • 1 tbsp Wholesome! Organic Cane Sugar

Method
 

  1. Spray a 3-quart baking dish with cooking spray. 
  2. Add the bread cubes and diced apples to the dish and toss to mix.
  3. In a large mixing bowl, whisk together the milk, cream, eggs, organic brown sugar, vanilla, 1 teaspoon cinnamon, and the nutmeg. 
  4. Pour the mixture over the bread and apples and gently press the bread cubes down into the liquid. 
  5. Let sit for 15 – 30 minutes to let the liquid absorb into the bread.
  6. Preheat the oven to 350ºF.
  7. Bake for 1 hour or until the mixture is set and golden brown.
  8. Brush the top of the bread pudding with melted butter.
  9. Combine the 1 tablespoon organic cane sugar with remaining ½ teaspoon cinnamon and sprinkle over the top.
