Dearly Beloveds, we’re gathered here today to celebrate a food that holds a special place in the Garza family’s hearts, (and on the dessert table, amongst the spread of colorful homemade sweets for every quinceañera, anniversary, & special occasion): the Mexican wedding cookie! They have many memories of cooking hundreds—hundreds!—of these in the kitchen with their Grandma Campos before each of their siblings’ weddings. Later, after embarking on their journey to health, these were one of the first sweets they recreated in a grain free and dairy free version, so they could continue to make—and bake—the beautiful memories that accompany these delicious cookies. Their Abuela Approved Grain Free Mexican Wedding Cookies are made from a blend of almond flour, pecans, powdered sugar, and cinnamon for all to enjoy. Sounds pretty dreamy, right? (OOP!
