Directions

• Add vegetable oil to a shallow pot to a depth of 1 ½ inches. Preheat to 350°F. Whisk eggs, milk, garlic powder and Cajun seasoning until combined. Add cornbread mix, jalapeno (decrease or omit if you don’t want your hush puppies to be spicy), green onion and cheese, then stir until combined.
• Using a 1 ounce scoop, drop balls into heated oil. Be sure to not overcrowd the pan. Fry until deeply browned, about 3–5 minutes. Remove from the oil and drain on paper towels or a rack. Serve immediately.
