The star of this bowl is our homemade Ginger-Peanut Sauce, a creamy, tangy, and slightly spicy concoction made with Simply Organic ginger, peanut butter, and a splash of lime. Each bite is a burst of fresh flavors and satisfying textures, making this bowl a perfect light yet fulfilling meal for any occasion.
Ingredients
unsweet creamy peanut butter
low-sodium soy sauce
olive oil
rice vinegar
honey
fish sauce
chili garlic sauce
Simply Organic® Ginger
Simply Organic® Garlic Powder
Simply Organic® Black Pepper
water
rice noodles
Sea salt or pink Himalayan salt, to taste
shredded carrots
thinly sliced cucumbers
shredded purple cabbage
avocado, sliced
fresh mint
fresh cilantro
fresh basil

Directions
- In a large bowl, combine peanut butter, soy sauce, olive oil, rice vinegar, honey, fish sauce, chili garlic sauce, ginger, garlic powder, black pepper and water. Whisk until well blended.
- Cook rice noodles according to package directions. Drain well.
- In a large bowl, combine noodles and ginger peanut sauce. Toss until well coated, then season with salt.
- Divide noodles into serving bowls and top with carrots, cucumbers, cabbage, avocado, mint, cilantro and basil. Serve with lime wedges.
Notes
- Recipe Tips:
- For a vegan version, simply omit the fish sauce.
- To bulk up the protein, add cooked shrimp, chicken or tofu.
