Elderberry BBQ Baked Chicken Wings
These elderberry BBQ chicken wings are a great game-day snack, sure to please everyone. The BBQ sauce can be made ahead of time making quick work the day of.

Ingredients
- 2 lbs chicken party wings (wings and drumsticks)
- 1 tbsp Frontier Co-op® Baking Powder
- 1 tsp Frontier Co-op® Sea Salt
- 1/2 tsp Frontier Co-op® Garlic Powder
For the Elderberry Sauce:
- 1/2 cup Frontier Co-op® Cane Sugar
- 1/2 cup water
- 1/4 cup Frontier Co-op® Elderberries
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 2 tsp Worcestershire sauce
- 1 tsp Frontier Co-op® Smoked Paprika
- 1 tsp Frontier Co-op® Garlic Powder
- 1/2 tsp Frontier Co-op® Sea Salt
- 1/2 tsp Frontier Co-op® Black Pepper
Instructions
- Preheat oven to 400 degrees. Line a sheet tray with 1 or 2 wire racks, however many will fit.
- Lay chicken on paper towels and dry well, then place chicken in a bag. Add baking powder, salt and garlic powder and shake until well coated. Line wings on wire racks, skin side up. Bake for 45 to 55 minutes, until crisp and golden. Remove and let rest for 5 minutes.
- For the sauce: In a pot, combine cane sugar, water and elderberries. Bring to a boil, reduce to a simmer, and let cook for 8 minutes. Remove from heat, strain out elderberries, and measure 1/3 cup of the elderberry simple syrup to use for the BBQ sauce. Store any remaining simple syrup for another use.
- Combine the 1/3 cup simple syrup with ketchup, vinegar, Worcestershire sauce and spices. Bring to a boil, reduce to a simmer, and let cook for 20 minutes until slightly thickened. Toss chicken wings with sauce, then serve.
