Looking for an easy Easter brunch recipe that can be prepared the night before? This mixed berry French Toast Bake is the perfect option! Tender cinnamon and Madagascar vanilla-infused French bread toast squares are complemented with colorful berries for a wonderful tasty treat and beautiful presentation.

Ingredients

  • loaf (12 to 14 ounces) French bread

  • large eggs

  • whole milk

  • cane sugar

  • Simply Organic® Pure Madagascar Vanilla Extract

  • Simply Organic® Cinnamon

  • sea or Himalayan pink salt

  • fresh berries of choice

  • Powdered sugar and maple syrup (optional), for serving

Directions

  • Grease a 9-x-13-inch baking dish.
  • Cut bread into 1-inch cubes.
  • In a large mixing bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon and salt until well combined. Add bread cubes and toss until well coated.
  • Pour French toast mixture into prepared pan. Top with berries, distributing them evenly over top. Cover and refrigerate for at least 1 hour, or up to overnight.
  • Preheat oven to 350 degrees. Bake for 30 to 40 minutes, until golden brown on top. Serve warm with powdered sugar or maple syrup.
