Apple Cider Donuts with Vanilla Sugar

minutesYou don’t need to make a trip to the cider mill for perfectly cakey, delicious apple cider donuts! Make them at home with this simple recipe and coat them in Simply Organic® Vanilla Finishing Sugar for a crunchy, vanilla-forward finish that will have you going back for seconds.
Ingredients
1 1/2 cups apple cider
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoon Simply Organic® Cinnamon
1/4 teaspoon sea or Himalayan pink salt
4 tablespoons unsalted butter, melted (plus more for brushing donuts)
1/4 cup unsweetened applesauce
1/3 cup whole milk or dairy-free alternative
3/4 cup light brown sugar
1 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
1/4 cup (or more) Simply Organic® Vanilla Finishing Sugar, for coating donuts
Directions
- Preheat oven to 350 degrees and lightly oil two 6-cavity donut pans.
- Into a small saucepan, add apple cider and bring it to a simmer over medium heat. Simmer for about 15 minutes, stirring occasionally, until liquid reduces to 1/2 cup. Remove from heat and set aside.
- In a large bowl, whisk together flour, baking powder, cinnamon and salt.
- In a separate bowl, whisk together melted butter, applesauce, milk, brown sugar, vanilla extract and the reduced apple cider.
- Add apple mixture into bowl with dry ingredients. Using a spatula, stir just until batter comes together — don’t overmix. Transfer batter to a plastic zip-top bag and snip off one corner with scissors, or use a pastry bag. Pipe batter into donut pan cavities, filling each about three-fourths full.
- Bake for 10 to 11 minutes, until tops are light golden brown and a toothpick inserted into the center comes out clean. Let donuts cool in pan for 2 minutes, then flip pan over onto a cooling rack to release donuts from pan.
- Into a shallow bowl, pour about 1/4 cup of Vanilla Finishing Sugar. Brush entire surface of each donut with a light coating of melted butter, then coat both sides in the finishing sugar. Use more sugar as needed to coat all donuts. Serve and enjoy!
