This Mexican breakfast skillet is made easy with Simply Organic® Mild Taco Simmer Sauce and creates a hearty, well-rounded meal for breakfast or dinner, with potatoes, sausage, black beans and nested eggs — all done on the stovetop!

Ingredients
  

  • 2 cup diced (bite-size), peeled yellow potatoes
  • 1 tbsp neutral oil
  • 1 lb breakfast sausage, ground chicken or ground beef
  • 1 Simply Organic® Mild Taco Simmer Sauce
  • 15 oz black beans, drained and rinsed
  • 5 large eggs
  • Sea salt and Simply Organic® Black Pepper, to taste
  • chopped tomatoes optional topping
  • avocado optional topping
  • cilantro optional topping

Method
 

  1. Bring a medium pot of salted water to a boil. Add potatoes and boil for about 10 minutes, until mostly fork tender; drain and set aside.
  2. Meanwhile, in a large skillet, heat oil over medium heat. Sauté breakfast sausage, breaking apart with a spoon and cooking until no longer pink.
  3. Add Simmer Sauce and cook for 2 to 3 minutes. Stir in cooked potatoes and black beans.
  4. In skillet, make 5 wells; crack an egg into each well. Season with salt and pepper. Cover skillet and cook for 6 to 8 minutes, or until eggs are no longer runny.
  5. Top with chopped tomatoes, sliced avocado and chopped cilantro, and serve.
